Smoked Mackerel pate
Rich in anti-inflammatory Omega 3 to support hormone function, our nervous system, and skin, this super quick lunch can be assembled in 5 minutes. Oily fish (mackerel, trout, sardines and salmon) and nuts and seeds (walnuts, chia, flax, pumpkin and hemp seeds) are all great sources of this essential fatty acid.
Recipe
- Serves 2
- I pack of smoked mackerel (discard skin)
- Half an avocado or 3 tbsp of yoghurt/coconut yoghurt
- Juice and zest of a lemon
- 2 spring onions finely chopped
- 1 tablespoon of capers, chopped
1. Blend the mackerel fillets with the avocado or yoghurt and lemon juice and zest in a mixer.
2. Season with salt and a generous helping of black pepper.
3. Stir in the spring onions and capers.
4. Serve with a large green salad or vegetable crudités.
